Apple Pie on a Sunday
This morning I woke up, begrudgingly, and walked the dogs around the neighborhood. About that time our neighbor came down to our house with her dog, Ladybug, and wanted to let her run around with Willie. Becks went outside to sit with her and I decided to cook everyone a breakfast of bacon and grits. After Becks and our friend had chased the dogs around the neighborhood (we need a fence) breakfast was ready. It was very nice to have a relaxing breakfast with our neighbors.
After they left I went down to Winn-Dixie and got the necessary items to make a large pot of homemade sauce and an apple pie. I had not made a pot of sauce with meatballs in a long time. I allowed it to simmer on the stove for most of the afternoon and by suppertime it was perfect. The meatballs were also pretty good, if I do say so myself. Homemade sauce taste better than anything you can get out of a can even if it takes awhile to make. Plus, there is no substitute for homemade meatballs. I cannot wait to get home to eat one cold out of the fridge. Yum.
The food theme continued into the night as I finally got around to baking an apple pie from scratch. I decided to top it with a lattice crust after tossing the apples in cream, sugar and spices. The pie came out very well and was very tasty with vanilla ice cream. I had some homemade pie crust and apples left over so I grabbed a muffin tin and made some little apple pies in them. I actually liked those better than the large pie. I think I may try to make a whole batch of the little mini-pies this week before I head up to New Hampshire.

I think we need to see some pics of that pie! Or at least what’s left of it!
I know! I should have taken a picture while it was still with us! My father-in-law stayed with us for the past couple days and now that pie is gone. I will have to bake another when I get back.
