Vampires and Watermelon Granita

After a week of Vacation Bible School Becks and I skipped church this morning. Instead I made us grits for breakfast and she watched Doris Day/Rock Hudson movies on television while I continued to read The Historian. If I had known this book was about Dracula I probably would not have decided to read it However, I have now read almost 300 pages and have found the book very enjoyable. I like the way the story has unfolded so far and am looking forward to digging deeper into it this week.

It rained most of the day and by this afternoon I was looking for something to do. I looked at the watermelon I had bought during last week’s Watermelon Festival and decided to make a batch of watermelon granita. I have made granita in the past and it is a tasty dessert. Below is the recipe I used:

Watermelon Granita
- 3 ½ cups of watermelon
- 1/3 cup sugar
- 1 cup water
- 1 tbs lemon/lime juice

I started by picking the seeds out of 3 ½ cups of watermelon and then pureeing it in our blender. I did not strain out the pulp (I like it in my granita). I then added the sugar to the water and brought it to a boil. I then combined it with watermelon puree and poured it into a metal pan that was placed in the freezer. Every 20 minutes or so I opened the freezer and stirred the mixture until it had frozen into little icy bits. I have seen recipes that also add some lemon/lime zest which could also add some more flavor.  The end product was delicious (fruity but not too sweet) and until I get to Sicily will have to suffice!
